Bonus bake: Ginger cheesecake cookies
I’m not a huge fan of cookies. Put a plate in front of me, and I’ll eat a couple but – unlike with chips – have no problem stepping away. Except for gingersnaps. Ginger is one of my favorite flavors and I love the way the bite of ginger balances the sweetness of the cookie. I never made my own, because I never had to. My daughter Kate had mastered the perfect gingersnap and was generous in sharing. She’s been gone three years now, and gingersnaps are among the approximately one million things about her that I miss daily. So when the New York Times ran this recipe for ginger cheesecake cookies – essentially stuffed gingersnaps - it seemed a worthy tribute to Kate. The recipe looked complicated: Fold the cookie dough around a frozen cream cheese filling? Say what? But it turned out to be surprisingly easy and insanely good.
I wish I could have shared them with Kate, but I did the next best thing. I ate her share. Here’s wishing a new year full of sweetness to all.

Thanks, Wendy - I'm going to try that recipe, too! And I have the same problem now with Alice Munro's stories. I haven't given away all my books of hers, but nor have I looked at them since.
It's always good to see what yummy treats you are making!
